To ensure the bacon slice is perfectly encased in the pancake, follow these three tips.

1. Opt for thick-cut bacon slices.

Bacon that’s too thin will crumble as you’re dipping each strip in the batter. 2. Leave a few lumps in the batter.

As you’re mixing the pancake batter, avoid stirring it too much. This will cause more gluten to develop in the mixture, which makes the pancake tough rather than tender. That’s why Jessica Randhawa, owner and head chef at The Forked Spoon, says to stir the batter until all of the ingredients are just combined. “The batter should still have some lumps,” she notes.

3. Gently dip the strips into the mixture.

How to make bacon pancakes

The recipe below is adapted from one shared by Randhawa. It uses a homemade pancake batter that contains buttermilk for fluffy and tangy results. For added flavor, incorporate a pinch of cinnamon or dash of maple syrup into the batter. So simple and yummy!

Bacon Pancakes

Ingredients:

  • 1 cup all-purpose flour
  • 2 tbsp sugar
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt
  • 1 cup buttermilk
  • 1 large egg
  • 2 tbsp melted butter
  • 6 strips of cooked bacon, drained
  • Melted butter or oil, for cooking
  • Dipping sauce

Directions:

  • Yield: 3 servings (2 bacon pancakes per serving)
  1. In large bowl, mix together flour, sugar, baking powder, baking soda and salt.
  2. In another bowl, whisk buttermilk, egg and melted butter until well combined.
  3. Pour wet ingredients into dry ingredients and stir until just combined; leaving some lumps in batter. Set aside.
  4. Heat skillet over medium heat and brush with evenly layer of oil or butter.
  5. Dip each bacon strip into batter, making sure both sides are fully coated. Cook a few at a time in skillet, around 3 to 5 minutes per side, until pancakes are fluffy and browned.
  6. Transfer bacon pancakes to separate plate. Repeat process with remaining bacon. Serve with dipping sauce of your choice.
