Florentine Pasta Salad Recipe Is Perfect for Summer + Full of Healthy Ingredients

And there really is no better meal accompaniment than a good ol’ classic pasta salad. The best thing about this dish? You can get creative with ingredients or keep it simple like we did with our Florentine Pasta Salad Recipe.

All you need is penne, fresh spinach, store-bought tomato vinaigrette dressing and jarred sundried tomatoes in oil. We choose sundried tomatoes, specifically, for their nice depth of flavor. They’re tart and chewy, and because they’ve been preserved, you’ll get more of that rich tomato taste. The other big component of this dish is spinach. Ingredients

  • 8 oz. penne pasta
  • ½ cup light roasted tomato vinaigrette salad dressing
  • 2 cups sliced fresh spinach
  • ⅓ cup drained sliced sun-dried tomatoes in oil
  • 1 scallion, sliced

Instructions

• Cook pasta according to package directions; drain. Rinse under cold running water until cool; drain well.

• In large bowl, toss pasta with vinaigrette, spinach, sun-dried tomatoes and scallion. Season to taste with salt and pepper.
