This Loaded Kebab recipe has succulent grilled chicken in an herbed marinade made with plenty of zesty lemon and is paired with zucchini ribbons and hearty chunks of red and yellow bell peppers.

You can use any type of skewers, but if you’re using wooden ones, we recommend soaking them in water a bit before cooking. This helps to prevent them from burning when you’re working on the grill. It’s also important to let the kebabs chill before grilling. This allows all the flavors of the marinade to soak into the meat and veggies. Ingredients

  • 1 batch lemon-thyme marinade
  • 12 (10”) wood or metal skewers
  • 2 zucchini, about 1 lb.
  • 2 red and/or yellow bell peppers, cut into 1 1/2” pieces
  • 1 1/2 lbs. boneless, skinless chicken thighs, cut into 1 1/4” pieces
  • 1 tsp. thyme leaves

Instructions

• For marinade: In bowl, whisk together 1⁄2 cup olive oil, 1⁄2 cup lemon juice, 1 tsp. grated lemon zest, 1 clove garlic (minced), 2 tsp. chopped thyme, 1⁄4 tsp. salt and 1⁄4 tsp. pepper.

• Reserve 1/4 cup marinade. If using wooden skewers, soak in water 15 min. Slice zucchini into ribbons. Thread zucchini, peppers and chicken on skewers; transfer to baking dish. Brush with remaining marinade. Cover; chill 2 hrs. Discard marinade.

• Prepare grill for direct-heat cooking. Grill skewers, turning once, until chicken is no longer pink, 5–6 min. per side. Brush with reserved marinade; sprinkle with thyme.
