Dreamy Layered Strawberries and Cream Parfaits Recipe Is the Perfect Summer Treat
Berries, gelatin and light-as-air whipped topping create a dessert no one can resist

When I was a kid, my mom used to make a special berry dessert she called blancmange. It was served in a parfait glass and it was a beautiful purple-pink color. Her blancmange was light and airy and sweet, and it tasted so good. That was the inspiration for our layered strawberries and cream parfaits recipe. It’s similar to the treat I loved as a kid, but I think it’s even better (don’t tell mom). And it’s perfect for enjoying on a summer evening.
In our easy version, there are layers of deliciousness. Cranberry gelatin and juicy strawberries make up the first layer, and we tilt the glasses to create that stunning angled look. Next we add strawberry cream and then top the whole thing off with whipped cream, fresh berries and mint. Trust me when I tell you that this treat tastes just as good as it looks. Ingredients
- 1 1/4 tsp. unflavored gelatin
- 1 1/4 c. cranberry juice cocktail
- 2 tbsp. sugar
- 1 tbsp. strawberry extract
- 2/3 c. strawberries, sliced
- 3/4 c. frozen whipped topping, thawed
Instructions
• In microwave-safe bowl, mix gelatin and 1/4 cup juice; let stand 3 min. Microwave in 15-sec. intervals until gelatin dissolves. In second bowl, mix remaining juice, sugar, and extract; stir in gelatin mixture. Transfer 3/4 cup to bowl. Cover; chill 2 hrs. When just starting to set, stir in berries; divide among 2 glasses. Tilt glasses to 45° angle; place in loaf pan. Chill 3 hrs.
• Meanwhile, stir whipped topping into remaining gelatin mixture. Cover; refrigerate until ready to assemble, whisking if mixture starts to separate.
• Spoon topping mixture over berry gelatin. Cover; chill until set, 1 hr. Garnish with whipped topping, berries, and mint, if desired.
