Buttery Croissant-Salmon Bake Recipe Is Oven-Ready in 25 Minutes + Great for Brunch

Smoked salmon and flaky croissants are the base for this hearty morning casserole

This Croissant-Salmon Bake recipe is the perfect toss-together option for your next brunch. Plain croissants are combined with smoked salmon, egg custard and cheese before it’s baked until golden brown and set. The baked casserole is then topped with tomatoes and fresh dill. In an hour, you’ll have a hearty and buttery bake to start your morning off right!

You can substitute bacon or sausage for smoked salmon to add an extra layer of saltiness to the dish. Additionally, other stale breads such as brioche, baguette or ciabatta work fine too. If you want to prep this casserole ahead, assemble it in the baking dish, cover and let it sit in the fridge for a few hours or overnight. Then, you can bake it when you’re ready. This bake is delicious on its own or served alongside a crisp green salad.

Ingredients

  • 4 eggs
  • 1 1/2 cups half-and-half
  • 2 scallions, chopped
  • 2 Tbs. chopped dill
  • 1/4 tsp. pepper
  • 6 croissants
  • 3 oz. sliced smoked salmon
  • 1/2 cup shredded
  • Gouda cheese
  • 3/4 cup cherry tomatoes, halved

Instructions

• Heat oven to 350°F. Grease 2-qt. oval baking dish. In large bowl, whisk together eggs, half-and-half, scallions, dill and pepper.

• Tear croissants into 4 pieces each; tear salmon into 1”–2” pieces. Add croissants, salmon and cheese to egg mixture; toss until combined. Transfer to baking dish.

• Bake until no longer wet in center, about 35 min. Top with tomatoes. If desired, garnish with additional dill sprigs.
