My cheat code to creating irresistible (and snackable) veggies is simple: coat them in breading and fry them. This works like a charm for crisping up most veg. But, when I want a quicker, less greasy option, I let my air fryer do the work. One of my favorite veggie dishes to cook in the air fryer is zucchini fries. Sticks of this vegetable are covered in a three-layer coating before they’re cooked in the appliance. In 8 minutes, you’ll have feel-good fries with a crunchy crust and tender interior — perfect for enjoying with a creamy dip. Here’s how to make air fryer zucchini fries as a speedy snack worth making on a regular basis! 

The nutritional perk of air frying zucchini fries

Deep-frying cooks up foods like zucchini fries until they’re crispy and brown. However, this cooking method spikes the calories and fat in the snack. On the other hand, air frying allows you to cook this dish so it’s crispy and doesn’t require any unhealthy fats. This is thanks to the air fryer’s circulating heat function, which distributes hot air around the zucchini sticks to quickly “fry” them. In addition to reducing the calories and fat, air frying produces zucchini fries that aren’t greasy.

Easy trick that helps the breading stick to the fries

After coating the veggie sticks in flour, egg and breadcrumbs, refrigerate them for 10 to 15 minutes. Doing this step ensures the coating clings to the veg’s surface, which prevents it from falling off in the machine. Once chilled, the fries are ready to cook in your preheated air fryer.

How to make zucchini fries in the air fryer

Our test kitchen’s Air Fryer Zucchini Fries recipe is sure to satisfy your snack cravings in a flash. To make sure these fries crisp up nicely, cook them in batches for an evenly flow of heat. Also, we serve the fries with dip as a creamy and yummy accompaniment!

Air Fryer Zucchini Fries

Served with dill-licious sour cream dip, these veggie fries crisp up in the air fryer for fuss-free yum.

Ingredients:

  • ¾ cup sour cream
  • 1 scallion, chopped
  • 2 Tbs. chopped fresh dill
  • ⅛ + ¼ tsp. salt
  • ¼ cup all-purpose flour
  • ½ tsp. paprika
  • ½ cup Italian-style dry breadcrumbs
  • ½ cup grated Parmesan cheese
  • 1 lb. zucchini, halved crosswise, cut lengthwise into ½-inch-thick wedges
  • 2 eggs, beaten

Directions:

  • Yield: 6 servings
  1. Preheat air fryer to 400°F. Mix sour cream, scallion, dill and ⅛ tsp. salt; reserve. 
  2. In bowl, mix flour, paprika and remaining salt. In separate bowl, mix breadcrumbs and cheese. Coat zucchini in flour mixture, then eggs and breadcrumbs. Arrange fries on plate or baking sheet and chill covered in fridge for 10 to 15 minutes.
  3. Place single even layer of fries on air fryer basket. Cook, turning once, until lightly browned and just tender, about 4 to 5 minutes per side. Transfer to wire cooling rack and repeating process with remaining fries.
  4. Serve crispy zucchini fries with sour cream mixture. Enjoy!

    Don’t have an air fryer? Divide breaded zucchini fries between 2 rimmed baking sheets coated with cooking spray. Cook in a 425°F oven for 4 to 5 minutes per side.
