You can’t go wrong with more cheese. While sharp cheddar remains a classic, combining different cheeses, such as mozzarella and gouda, ensures a complex flavor profile and optimal meltability. If you’re trying to be mindful of your fat intake, opt for fat-free or light versions of your favorite cheeses.

2. Make a roux

Start with a roux (a mixture of butter and flour) to thicken the cheese sauce. Cook the roux until it’s a light golden color before adding milk or cream, ensuring a smooth, lump-free sauce. If you’re short on time, you can also use cornstarch to thicken the sauce.

3. Choose the right pasta

Go for pasta shapes that hold the cheese sauce well, such as elbow macaroni, shells or cavatappi. The nooks and crannies of these shapes catch and hold onto the creamy sauce, for the most flavor. If you really want to boost your protein intake and stay away from simple carbs, why not try chickpea pasta or lentil noodles? Normally when I make mac and cheese, I usually go for the store-bought box. But this recipe from i heart vegetables proved too easy to ignore. It takes just 15 minutes to whip up and you can even turn it into a bake by transferring it to a casserole dish and topping with breadcrumbs and more cheese. I also recommend using a block of cheddar instead of pre-shredded; the latter may result in a grainy sauce.

Ingredients:

  • 8 oz. pasta (you can use whole wheat, chickpea or regular pasta)
  • ½ cup cottage cheese, 4% milkfat
  • 1 cup milk, 2% (whole or skim also work)
  • 1 Tbs. cornstarch
  • About 1 cup shredded sharp cheddar cheese
  • ¼ tsp. salt
  • ⅛ tsp. pepper
  • ¼ tsp. garlic powder
  • ¼ tsp. paprika

Directions:

  • Total Time: 15 minutes
  • Yield: 4 servings
  1. Cook the pasta according to package directions.
  2. In a blender, combine the cottage cheese, milk, cornstarch, cheddar cheese and seasonings. Then, blend until smooth.
  3. Pour the cheese sauce into a skillet and heat over medium-low heat. Cook for four to five minutes, until the sauce has thickened slightly.
  4. When the pasta is cooked, stir into the cheese sauce. You can also remove ¾ cup pasta and add 2 cups broccoli for a veggie-forward dish. Add additional seasoning to taste if desired.

Storage instructions:

Store leftover mac and cheese in an airtight container in the fridge for up to four days. It can also be frozen for up to three months.
