Celebrity chefs tend to have a revolving door of people they’ve cooked for so it can be hard to keep track of every single dish they’ve prepared. But, there’s likely to be a handful of memorable meals that have stuck with them for various reasons. This is especially true for Gordon Ramsay who recently shared his unforgettable experience preparing a meal for the late Princess Diana.

On the first episode of Ramsay’s two-part ITV food and travel series, Gordon, Gino, and Fred Go Greek, while on a culinary adventure in Greece, fellow chef and co-host Gino D’Acampo, asked him what was the best meal he ever cooked. After taking a moment to reflect, he responded, “I think cooking for Lady Di once.”

He went on to describe her as beautiful and noted that she was as “renowned as the supermodel of the islets — Santorini,” as they took in the view of the iconic coastline. Like many people who have encountered and spent time with Diana, she left quite an impression on Ramsay: “She was by far one of the most gracious members of the royal family I’ve ever met.”

He first recalled this experience during a 2016 interview with The Daily Mail when asked who his dream dinner date would be. He responded by saying “Lady Di” and mentioned that he cooked for her in the ’90s as a chef at the now-closed London restaurant, Aubergine. He added that she ordered a pressed leek terrine and sea bass as a main course (sounds delicious!). Cooking for a member of the royal family might sound daunting at first, but Diana was willing to try Aubergine’s lunch menu without any fuss or request for a separate dish to be made. “When she came in she was so normal,” Ramsay said. “No airs and graces.”

A delicious meal prepared by a world class chef sounds like a dream, but for Diana it was an everyday thing. Former palace chef Darren McGrady noted that he would often whip up her up her favorite meal of stuffed peppers with smoked tomato sauce. He also mentioned that she would often eat at the kitchen countertop while casually chatting with McGrady as if she was having lunch with a friend. We can’t get enough of these stories about Diana and her down-to-earth nature.
